veggies for breakfast: kale crepes

Here's another way to get an extra serving of veggies in the morning...Kale crêpes! I made Jessica have some and tell me I wasn't crazy...They are very green. :)  

Puree some (de-stemmed) kale leaves with 1 cup milk in blender or with immersion blender. I used about 4 leaves. Pour into a bowl. Add 1/2 tsp vanilla, 2 eggs, 1 cup flour (I used whole wheat pastry flour), 2 tsp sugar, and whisk. Serve with fresh fruit and maple syrup.
Serves 3-4.

I thought the house smelled a lot like kale as I was making them, but when they cooled down and I ate some of the leftovers cold, I could hardly taste the kale. They were great leftover and would be good with a savory topping, too.
